Restaurant Review - L'Ambrosia, Pezens near Carcassonne

L'Ambrosia restaurant

In 2007, Daniel Minet aged 22 years old, opened the L'Ambrosia Hotel and Restaurant in Pezens with his parents. His talents were soon recognised with a Michelin Star making him the youngest chef to receive this accolade.

Daniel admits that at the age of 15 he couldn't even cook pasta, but after an apprenticeship in the best establishments of the Region, his natural talent and passion were soon evident.

The Ambrosia is a real team effort, says Daniel, who works in the kitchen with his five assistants while the front of house is managed by his parents.

You are offered a warm welcome and the promise of a lovely meal in the pleasant ambiance of the restaurant or the terrace in the summer. With just 35 covers you are assured of excellent and attentive service. The menu changes with the seasons and only fresh produce is used from the region. Daniel likes to revisit classic dishes and create his own - adding that little ingredient or texture that sets it apart. The presentation of each place is a feast for the eyes.

Daniel believes that to do this job, you need to like people and want to please them. The only thought in his head when he arrives in the morning at his kitchen is that his clients leave satisfied and have had a pleasant time at the Ambrosia.

Bon appétit !
